Eva del Carmen Caballero Lacey came into this world August 14th, 1954, in La Peña Panama, and went into God’s hands on March 6th, 2015, Litchfield Park Arizona. Born to Pedro and Barbara Caballero, she was the youngest of 8 brothers and sisters.  After meeting her husband James, while stationed at a U.S. military base in Panama City, she left with him to forge a new life in the United States. Eva was an avid learner.  She taught herself English, gardening, and later mastered the arts of cooking and baking. Her skills in the kitchen were a major part of the success of the Spicery Restaurant during its heydey in historic downtown Glendale.  Later on Eva took pride in earning near perfect scores for kitchen cleanliness while working for the Litchfield School District, where she truly enjoyed and loved serving the children. In her spare time, Eva enjoyed travel, especially to her homeland of Panama. Her favorite pastime was cooking elaborate meals, crafting decadent desserts, and enjoying said meals with all of her friends and family members.  When she couldn’t touch someone with her heartfelt cuisine, she would pick up the telephone and call. Beloved by many, Eva was rewarded with multiple lifelong friendships.  She was blessed with two children, and a wonderful granddaughter. To her, family meant the world. She would often say, “everything I worked hard for was for my family.” For two years, Eva fought valiantly against stage four stomach cancer, until the Lord decided that she had fought too hard and long.  She is survived by her husband James Lacey, son Christopher Lacey, daughter Michelle Hubbs (Clayton Hubbs), granddaughter Bryce Lacey, brothers, sisters, loving in-laws, and many nieces and nephews. She will forever hold a place in our hearts. Viewing and rosary will be held from 6PM-9PM, Wednesday March 11th at Thompson Funeral Chapel 926 S Litchfield Rd, Goodyear, AZ 85338. Funeral Services will be at 10 AM, Thursday March12th at the First Southern Baptist Church of Avondale, 1001 N. Central Avenue / Avondale, AZ  85323, and 11:45PM at the Resthaven Park Cemetery 6450 W Northern Ave Glendale, AZ 85301. Reception immediately to follow.

  1. We have found memories of Eva at The Spicery – her yummy dishes, her great laugh and sense of humor. We appreciate all that she did to help our Mom, Martha. May you know God’s comfort and presence during this time of loss, and may His eternal hope bring you peace as you miss her each day.

    Eva Lacey she was my grandma as I called her abilita she has always loved me and her family. I miss her so much and love her so much . I can’t wait to see her again.
